Allow Edit of Log Email Activities from track@donordock.com and other sources

Would like the ability to edit the activity once it is recorded on the record (if the track@donordock is used) so that we can go back in and add appropriate appeals/campaigns etc. Otherwise the track@donordock really isn't useful for us.

I would like to have the ability to update activity for emails sent through other platforms, such as Klaviyo, in DonorDock. Currently, I can add activity but not update it. It would be beneficial to feed in email deliverability, opens, and other metrics to keep our records up-to-date and comprehensive.
